Slow Food The Upper Galilee


Where is the Upper Galilee and what is so special about it?

The Upper Galilee is located in the northern part of Israel . In this area most of the people live in Kibbutzim and Villages, surrounded by orchards whose trees produce apples, pears, nectarines, peaches, apricots, almonds, figs, avocados, plums, olives, lemons, oranges, grapefruit, mandarins and kiwi. The close-by Golan Heights are plentiful in wild forest berries and different kinds of cherry. There are three rivers crossing the Hula Valley and becoming one – the Jordan River . These rivers are one of Israel 's most important drinking water supplies and are well known for their good quality and great taste. Agriculture still plays an important part of the Galilee 's economy, as well as Industry and Tourism.

The profusion of wine grapes that grow in the northern vineyards of the Galilee and the Golan Heights have given the surrounding wine producers a reputation for creating wines of the highest quality. The local soil and weather conditions are perfect for growing olive trees, and indeed olive oil that comes from the region is considered a delicacy.


The Dan River is also a well-known source of freshwater fish – We enjoy locally cultivated carp, trout, catfish, eel and sturgeon.


The Upper Galilee is home to a number of excellent cheese makers who supply us with high quality dairy and goat cheeses, young or cured cheeses with tastes ranging from traditional and classic, to fresh and original flavors.

The Slow Food Upper Galilee Convivium

Was established in early autumn 2006 by Einat and Avigdor Rothem, The owners of Pausa-inn, a Gourmet inn that keeps the hospitality and cuisine in the slow food tradition. They invited some good friends to join them –

Eyal Elhanati – Owner and Chef of local grate Restaurant by the name of "Fucatcha".

Birgit Reshef – Basket Weaver, who slowly uses branches of Date Trees to make different kinds of baskets. Birgit gets the materials she needs from the farmers that grows dates in different parts of Israel .

Betzalel Reshef – Owner of olives trees orchards and self producer of "Sion" - Extra Virgin Olive Oil.

Our convivium activities contain meeting, eating, drinking and workshop sessions about all the beloved slow food issues.

As a young convivium we are looking forward for any type of cooperation with slow food people from all over the world, that can add their contribution to our mutual interest.
